Notes

The Art of Fermentation
Fermentation is what allows simplicity to stand on its own. 耀 Hikari’s soy sauce is slowly fermented to develop layered umami and gentle sweetness—qualities often achieved elsewhere through added dashi. Here, fermentation alone creates that depth. When poured over warm rice and a fresh egg yolk, the soy sauce acts not merely as seasoning, but as a unifying element. It enhances the egg’s richness, rounds the grain of the rice, and ties the bowl together into a quietly satisfying whole.

Serving Notes
  • Mix gently before eating to fully coat the rice with the silky yolk and soy sauce.
  • If you prefer a stronger savory profile, add an extra pinch of bonito flakes or an additional dash of soy sauce.
