This private tasting experience examines how Japanese tea interacts with fermented foods to shape umami, aroma, and balance.
Guided by a fermentation-focused cooking instructor, the session approaches tea pairing from the perspective of food structure and fermentation logic. The emphasis is not on ceremony or performance, but on understanding flavor relationships in a way that is both intellectual and sensory.
Using four Japanese tea leaves, you will experience five distinct tea expressions, including variations created through brewing method and temperature. Among them, gyokuro is prepared with particular care, allowing you to experience how subtle shifts in heat and time reveal deep sweetness and umami.
Each tea is paired with fermented dishes prepared in advance, allowing the session to move at a calm, thoughtful pace focused on tasting and comparison.
